I fell in love with
parsnips last fall and haven’t been able to get enough of them since. A relative of the carrot,
parsnips are sweet like their cousins but are not quite as enjoyable raw. They’re perfect
roasted or in soups and were probably introduced to many people (myself included) via Terra Chips.
So as much as I love chopping
