pearl onions are easy to deal with. I use them in flavorful stews and soups, but when the dish is  ALL about the onion, I’m not going to sacrifice the better flavor of the fresh and use frozen!  Fresh
pearl onions are actually quite easy to peel and cook, despite their bad reputation, and with an onion-y cream sauce and toasted bread crumbs on top this is one heck of a take on a holiday classic.
