If there is any cake that reminds me of my lovely gran, then this would be the one. She made a fantastic pineapple upside down cake which went down well with everybody. I remember helping her to put the pineapple rings in the bottom of the cake tin and placing a gleaming red glace cherry in the middle of each one.
