In feeding the project team this week, I wanted a cake but then thought that really cupcakes are easier to serve. I went in search of a carrot cake recipe that was easy and had rave reviews but also allowed me to play. I found this recipe on Taste. It certainly had very good reviews and on reading them others had “tweaked” the recipe. I decided to double the recipe and also add sultanas and walnuts.
