It was cold and raining outside so I wanted to make something comforting and delicious for dinner. I found this great Cooking Light recipe that sounded really interesting and tasty. I was only able marinate my chicken for a few hours but it still turned out really good. I reduced the marinade down and used it to baste the bird every 15-20 minutes while it roasted. The chicken turned out

We were having friends over for dinner. I wanted to serve something simple, healthy and hearty. Since I loved the Roasted Garlic and Basil Marinara so much, I decided to make that again and mix it with campanelle pasta and roasted vegetables. We served this dish with a tossed green salad and freshly baked bread. A delicious dinner that we all loved, including the kids.Campanelle with Roasted

I found this soup recipe in a Cooking Light Magazine called "The Best Chicken Recipes". I wanted to make a healthy but comforting dinner because it was a rainy and cold outside. This soup was quick and easy to make and tasted really delicious. I used leftover roasted chicken and vegetables I had in the refrigerator as well as whole wheat egg noodles. I loved the big chunks of chicken, potato and

I made this appetizer for a friend’s birthday party along with the Caprese Skewers. I found this recipe in my new favorite cookbook, Tyler’s Ultimate by Tyler Florence (thank you Jason). I adapted the recipe a bit by reducing the butter and anchovy amounts and by slicing the baguette. The combination of caramelized onions, salty anchovies and Asiago with the tangy olive was amazing! My daughter LOVES soup. I bought her a thermos for her lunch bag so she could take soup to school for lunch. She was hoping I would make some this week so I decided to make a beef vegetable noodle soup. It’s very similar to beef stew (her VERY favorite meal) but instead of adding potatoes I add spaghetti noodles as well as fresh green beans. The soup was a delicious dinner that we all enjoyed. My

Simple. Quick. Delicious. This isn’t much of a recipe but it’s a very delicious and healthy side dish that is super easy to make. Adding just a touch of butter made the beans so delicious without being greasy. I loved the crunch and flavor of the toasted almonds and so did my kids. I served this side dish with the Chicken, Mushrooms and Orzo and my House Salad for a very tasty meal.Green Beans

We were having friends over for dinner and it was pouring rain outside, so I decided to make a big pot of chowder. I had leftover corn from my neighbor Jack to use up so I went in search of a corn chowder. I found this recipe on Cooking Light and adapted it just a bit. It turned out rich, creamy and very filling. The kids didn’t LOVE it but the rest of us did. We served it with a fresh tossed

I am back from a much needed break. We had so much fun visiting with our family, relaxing, reading, playing games, eating and going to the ocean. I cooked a bunch of old favorites that we haven’t had for a long time - I forgot how much I loved them. This recipe is really simple and easy to make. I decided to try flavoring the orzo by cooking it with some chicken bouillon and I must say it was so

I am in love. Truly, in love. I adapted this recipe from one I found on Yellowfish. I used a freshly picked zucchini and tomato from my neighbor Jack’s garden along with other ingredients I had on hand. I loved the idea of using thin slices of potatoes as a crust instead of pastry. It was very simple to make and tasted FANTASTIC! The possibilities with this quiche are endless and I can’t

Our friends were coming to our house for dinner. The best part is, I didn’t have to cook. Currié made chicken pot pie, which is my very favorite of her recipes. The kids and I decided to make a nice dessert to thank Currié for making dinner. When looking through my baking cupboard I found some leftover cocoa powder, coconut and pecans. I decided coconut pecan brownies would be tasty. The

So these stuffed chiles aren’t the most visually stunning food but they are SO UNBELIEVABLY DELICIOUS. Seriously, I need to use all caps for how good this dish was. We had friends over for dinner and I wanted to re-create a recipe I had at my favorite Boise restaurant called Barbacoa. I loved the dish so much the last time I was there, I asked the waiter to grab the chef. He came out to our table
