I thought it would be simple to put together a nice blintz recipe to put up in time for New Year’s Day brunch. But then again, somehow I forgot that I am a compulsive food nut! I started with my original recipe which called for 3 eggs, 1 cup of skim milk, 1 cup of flour and a few other ingredients (we’ll get to the filling in a minute).
