After a busy week of Spring break, here I am tired but I had to post this recipe. It’s too good to not share. The original idea really came from this amazing post at Jennie’s Kitchen.
Cheesy Lentil Burgers
2 cups lentils, cooked 3/4 cup shitake mushrooms, rehydrated or 1 cup fresh, chopped1/4 cup basil, chiffonade2 generous tablespoons chopped walnuts1/2 cup ricotta2/3 cup peccorino romano or parmesan1 cup bread crumbs2 eggspepper
