I have another recipe here for
enchiladas, but I wanted to find a different one to make this time and it was Cinco de Mayo. This one sounded good, and it was! We liked them. I made a few more than the original recipe said it makes, so squish them all into your pan, they’ll fit! I served these up with refried beans and this mexican rice.
