Chimichurri sauce is a green sauce commonly used for marinade or as a dipping sauce for grilled meats. I have always wondered why it has not been used in pasta dishes. I decided to embark on a culinary experiment and create an entire new dish using chimichurri sauce and classic South American ingredients such as skirt steak, black beans, red peppers, and corn.
