Chipotle Chowder
makes 1 1/2 qts
Saute in heavy saucepan over medium heat:
4-6 diced Bacon Strips
Once lightly browned add:
1 Cup diced Onion or Leeks
1/2 Cup diced Celery
1 Tbsp minced Garlic
Stir in and let brown up 1-2 minutes:
2 Tbsp Flour
Deglaze with:
1/4 Cup Sherry
Stir in:
3 Cups Chicken Broth
2 Cups Frozen or canned Corn
2 Cups Diced Red Potatoes
2 Cups Milk – your choice Whole or 2%
