I can’t seem to get ahead these days, even when I’m ahead! I made these cookies for September’s Cookie Carnival a couple of weeks ago and just now am finally getting them up. Whether they make it into the roundup or not, these little babies deserve their moment in the spotlight. Bars with a chewy, roasty-toasty coconut top and a soft chocolately-chewy brownie-like bottom.
