A couple of months ago we planted some tiny courgette plants, I have watched them survive a major aphid and caterpillar attack , seen flowers grow and wilt and finally they are   large enough to eat. I wanted a supper dish when courgettes could shine  We picked four 4 inch long courgettes and dinner was ready in minutes from just one pan.  The frittata of  sweet onions and courgettes and salty parmesan was delicious.
