Cucumbers are another of summers fresh bounty that I have been enjoying a lot lately. I normally bring home two or more of them from the farmers market every week and I tend to use them in salads or just snack on them as they are. I really like cucumbers on warm summer days as they are nice and juicy and perfect still cool from the fridge. I have however noticed that cucumbers rarely get the attention that they deserve!
