This was my first attempt at making
polenta, and I have to say, it wasn't as bad as I thought it would be. Thanks to The Well-Seasoned Cook, who had a simple but delicious-sounding recipe with a mascarpone base (rather than cream) which I borrowed. I know she suggest not substituting the mascarpone, but I figured most of us will find the price of mascarpone a little steep (although you can make it yourself - Laura at Hungry and Frozen has a guide).
