Dum Aloo

Ingredients
1 kg potatoes, boiled and peeled1 large onion, finely sliced1.25 cm / 1/2 - inch ginger3 cloves garlic2 green chillies2 teaspoon cumin seeds2 teaspoon coriander seeds1/4 cup water1 teaspoon mustard seeds3 tablespoon oilSalt to taste1 cup fresh coriander leaves, chopped
Method
Make a smooth paste of ginger, garlic, green chillies, cumin and coriander seeds. Mix with 1/4 cup water and keep aside.
Heat oil and fry mustard seeds till they begin to crackle.
