I know another eggplant recipe… this one Chris actually made before I made the Eggplant Casserole (I’m still trying to catch up!) This is another Giada recipe that we tweaked. We used all sausage (because as you know I’m obsessed) but you could make it 50-50 with ground beef! It turned out delicious, however I think the leftovers were better because we threw it back in the oven in a casserole dish and it got firmer and crispy on the edges. YUM!
