Today I went to the farmer’s market and got some peas.
Fresh peas are wonderful to eat raw, but they have to be really really
fresh, like eaten the same (or next day) they were harvested. That’s when they taste best, because like corn, when they are cut they start converting their natural sugars to starch and that means than they become less digestible raw.
Fresh peas have a distinctive sweet flavor. If they don’t taste sweet, you can still eat them but it’s preferable (...)
