One of the reasons that I love cooking is that it forces me to employ my senses more than my cognitive ability. In other words, my brain can enjoy the equivalent of a snooze on the couch, while smell or feel or taste take over. I get enormous pleasure from the meditative moments as I watch a pot boil, or hold down the lid on my food processor while it whizzes away (don’t ask).
