Ahhh, Risotto..who doesn’t love a rich, creamy risotto?  Well, who doesn’t love a rich, creamy risotto outside the one who’s cooking it?   I think most agree that standing at the stove for 20 some odd minutes, adding simmering stock, stirring until the rice absorbs it, then adding more, ad infinitum, could be called tedious.  It’s like lather, rinse repeat over and over again until your head feels numb. Let me make this clear..I’m not bashing risotto..I love it (...)
