Sure Japan is famous for its high art and philosophy, complex and yet simple aesthetic, and a level of organization that seems exhausting just thinking about it. Really I think of perfectly trained and restrained execution in the kitchen, something that I will never master, when I think of
Japanese cuisine. But the kind of
Japanese food I really want to eat? The
