Finally! I got my hands on some Jersey fresh tomatoes. I’ve been hearing about them and how fabulous they are ever since I moved here two years ago. I made a trip to the local farmer’s market and picked up 4 large tomatoes. Ten dollars later I had my tomatoes in the bag and headed home to experience Jersey tomatoes. These things better blow my socks off for ten bucks. I almost decided not to get them because of the price. I even let them ride in the front seat of the car to avoid any possible bruising on the way home. When I arrived home I sat the tomatoes on the kitchen counter and stared at them for a good 15 minutes. Now that I had them, I had no idea what I was going to do with them. First I peeled them. Which was no easy task. These babies have really thick tough skins! Then I seeded and chopped them. I wanted to use them raw and room temperature to get the full true flavor of the tomato.
