Jam Muffins
I love a good muffin. So when I came across a recipe in Cooking Light for low-fat strawberry cinnamon
muffins, I knew I had to try them. I had some raspberry preserves in the freezer, so I used those instead (although you could also use cinnamon-apple freezer jelly if you like), and the
muffins came out moist and sweet, with a beautiful zing of bright red
jam in the center. Just don’t get over-zealous on the
jam, or you will end up with a mess - 1 tsp. of
jam per muf (...)
