I would hardly describe myself as a fanatic, but I am definitely a tofu person. Tofu was such a staple in my diet as a child, I couldn’t much imagine going without. But my relationship to tofu growing up was very pure. I was prepared fresh tofu and a variety of different forms of Chinese tofu–fried tofu, bean curd, and so on.
