Over the weekend, the plan was to make the
Mango Refrigerator Cake featured on New Asian Cuisine. Along the way, somehow it morphed into something totally different. It doesn't look as stunning as the original but the taste was sensational.
MANGO GINGER DESSERT
1 large ripe
mango, peeled and sliced
6 sponge fingers
1 cup
ginger beer
250 grams mascarpone
100 ml of thickened cream
1 cup icing sugar
1/4 cup of sliced candied
