This
salsa didn’t last long. The flavors all mend together so perfectly…I served these with my homemade baked tortilla chips.

mango½ cucumber, diced¼ red onion, diced½ jalapeno, diced1 TB lime juice? C cilantro, choppedsalt/pepper to taste
Peel and chop the
mango. Toss with remaining ingredients.
How to
cut a
mango:
Slice the “cheeks” off the sides, and
cut criss-cross marks into the flesh. Invert the slice, and trim the cubes out.
