This is a modified recipe I got from Oprah Magazine a couple of years ago. There was far too much use of ‘light’ ingredients for my taste, so I substituted the real deal, more of it. Hey, if I’m giving up
mashed potatoes for this extremely healthy alternative, I’m not giving up the toppings, too. I’ve found that it’s a staple side-dish for me now. Delicious with or without the reduced balsamic vinegar.
