My parents recently celebrated their 40th anniversary, and we had them over for a Mexican feast. Lots of good food and great company - how can you go wrong?!? Dishes included Cherry Tomato and Lime Salsa, Avocado Salad, and Chicken Enchiladas. The Avocado Salad originally came from a Barefoot Contessa recipe, but I have adapted it a bit to our liking.
