I mentioned recently that I used to have a very lovely Butcher (here), I lost my butcher to his family, which, almost made me cry, but more happy tears, after all, somehow ‘butcher’ and ’sensitive’ don’t automatically spring to mind as a natural pairing. Anyway, I’ll always think of him as ‘my’ butcher, and I know MY butcher would have very much approved of this recipe. My ribs are quite different to the ones Nigella uses.
