Sometimes, I’m quite happy that the only person I have to cook for is me. Why? Because it means if I want omelet for dinner, that’s fine. If I want leftover dinner for
breakfast, it’s fine. But planning 3 meals a day, is still daunting. Over the weekend, I decided to find a recipe that would be easy to make, relatively healthy and last me the entire week for
