Last night was yet another of those days when dinner is a mad rush and I relied on a ready made spice blend from the ever handy Spice Shop. This time round it was a
Penang curry blend — containing coconut milk powder, lime leaves, galangal, lemon grass, plus all the usual curry spices such as cumin & coriander. This combination of flavours and the fact that they are all pre-roasted and made in relatively small batches ensures a fresh and slightly nutty flavour to the finished curry.
