This
salad is simply one of my favorites for many reasons:
It goes with just about any meal (beef, italian, chicken, etc)
It’s not complex, yet full of flavor.
Since
arugula (a.k.a. rocket) is a sturdy green, you can make it about 30 minutes ahead of time while dinner is cooking, and it won’t wilt.
It’s a nice,
peppery, leafy green that’s packed for of good-for-you-stuff.
It’s stupid easy.
