I wanted to make a simple dessert for the food critic today. Since Ohio-grown peaches are available, I made a
Petite Peach Shortcake. I baked another butter-sponge cake (with rum flavoring this time) using two 6-inch baking pans. I wrapped and put one cake in the freezer for a later date. Sliced fresh peaches, coulis, a dollop of yogurt and freshly-grated cinnamon on top.
