Beets are easy to work with and there are several ways to prepare them. In the cold weather it’s nice to put them in foil packs with the skins on, baked them, and then removed the skins when done. In the summer, I choose the boiling method. When choosing your beets at the grocery store, try to get a bunch that has beets of approximately the same size.
