This is a simple
bread pudding that is very healthy and very vegan. I was searching for Thanksgiving recipes when I found this recipe in New York Times by Chef Chloe Toscarelli. The recipe was simple enough and was perfect as a chilly night dessert. As per availability I adjusted the items a little but it turned out perfect for me.
Ingredients:
Coconut Milk: 1 cup
Pumpkin: cooked/baked and pureed: 1/2 cup
Brown Sugar: 6- 8 tbsp (I used Demerara Sugar)
Salt: 1/2 tsp
