After the apple pie oatmeal I made recently, I havn’t been able to get enough oatmeal! And I have to admit, as much as I enjoyed the apple pie oatmeal, this pumpkin pie version is even better! I was actually excited when I woke up this morning, knowing that the leftovers were waiting for me in the fridge! I first saw this recipe over at Closet Cooking, and knew I had to try it.
