Huevos rancheros basically means “ranch eggs” because they were usually made with what was around and that was usually beans, chile and tortillas. It is by far one of my favorites to eat and to serve. I like flour tortillas. Others like corn tortillas. Besides the subtle difference in the tortillas the flavor is the same - great!
