Morning! It’s not even 9 am in Seattle, where I’m visiting my family, but on the East Coast, it’s time for lunch.
This recipe for Gazpacho with Marinated Feta, Olives & Basil takes literally minutes to put together, packs a lot of flavor and is incredibly pretty.
Make this on a hot day or whenever you are craving tomatoes.

I have a ton of fresh basil that needed to be used up so I decided to make a basil garlic butter to spread over the deliciously sweet corn. I boiled the corn for just a few minutes then smeared it with this butter… it was wonderful! Fresh, quick, and simple - you can’t beat that

I learned about spatchcocking chicken from my friends Marjie and Chris and I’ve been wanting to try it for a long time. I found this Martha Stewart recipe that looked wonderful so I finally decided to give it a go. I found a great step by step pictorial at Cookthink that walked me through the process of preparing the chicken. It was easy to do (as long as you have sharp kitchen shears) and
