My awesome and generous neighbor Jack gave me some freshly picked corn from his garden and I couldn’t wait to eat it! I have a ton of fresh basil that needed to be used up so I decided to make a basil garlic butter to spread over the deliciously sweet corn. I boiled the corn for just a few minutes then smeared it with this butter… it was wonderful! Fresh, quick, and simple - you can’t beat that

Ah, corn on the cob… and all the mixed feelings it stirs within my loins by the end of August!
Don’t get me wrong. I think sweet summer corn is one of the best things around. And I’m a firm believer in getting as much of something as I possibly can while it’s in season. But, I have to admit that I grow tired of eating corn the same old way, week after week, in the heat of summer.
So, we try to find ways to change it up a bit.
When the first corn on the cob is available, we grab three or four ears at a time and make it into a meal. We grill it. And when we tire of grilling it, we steam it. When steaming it grows old, we cut it off the cob and throw it into our pasta. And our rice. And our eggs. And when we tire of doing that… we bake it.
Yup. Baked corn.
Can’t beat it.
First, you need some primo corn on the cob. Shuck it and make it all pretty.

The only way that I’d ever eaten Corn on the Cob in the past, was boiled* and served with butter alongside a Quiche or something else equally as depressing; (Actually, just boiled for me, since I’m not keen on straight butter.)
*Funny story about that. One day during the Summer, a good few years ago - I was maybe 10 - I was round at a friend’s house playing baseball using a plastic bat with a picture of a frog on it (Yeah, we did call it “Frogbat”). Towards the end of our game, his mother screamed at us to come inside and eat something before she went to work. She was a very loving mother, always taxi-ing us places and making Halloween costumes at the appropriate time, all the while holding down two jobs.
She screamed, and the two of us made our way round the back and inside. She didn’t ask us to take a seat, or even to wash our hands, instead, she scarred my mental image of Corn on the Cob forever. With her b…
