I’ve been wanting to try my potato crust quiche using shredded potatoes instead of sliced potatoes. I made this quiche for dinner and used diced tomato, fresh spinach, dill, red onion, and feta cheese. I made a simple salad filled with vegetables and decided to make a quick and easy buttermilk salad dressing to go with it. I found some fresh dill in the refrigerator and decided it would be the perfect dressing for our salad. It took minutes to make and tasted wonderful! The closest thing I have had to the real thing is a borscht made by a friend from Poland. It was delicious and poured out of a beautiful sleek glass pitcher that looked like fine crystal.
