I swear, I have been suffering from some major attention deficit lately. I’d start doing something, something catches my eye, I turn to it and before I know it, I’ve been distracted at number of times and I had forgotten what I had set off to do in the first place. In the meantime I had wasted a major chunk of time and never really accomplished what I set out to do.
That’s kind of what’s been going on in this blog. I now have a back log of recipes that I’ve been meaning to post but just never got around to doing. I can’t regain time lost, but I can pick up where I left off, which is with the grilled chicken skewers I posted over a week ago for LaPiS (which I totally missed this week - sorry, I’ll catch up this Sunday).

Ohio-grown sweet corn was at the Coit Road Farmers Market this week, and you know I had to grab up some. In fact, just like with all the locally grown summer vegetables, this is one that I put up in the freezer for winter. I usually buy 12 ears at a time and put up 6, so by the time Fall comes around I am able to cook slow food holiday dinners for my family, as well as having some for soups and stews. Also picked up some Ohio-grown cilantro at my local family-owned grocer, Zagara’s Marketplace, they are great about carrying local produce. I wanted to make a healthy salad. Salads are the perfect summer meal for me, because they mean little or no cooking. The following recipe was adapted from a magazine article I clipped, I put my own twist to it.
The Food Pyramid esp for Vegetarians is little complicated. The need to maintain the essential balance is so crucial - instances like did you take the required amount of Dietery Fibre? what about whole grains? Did your meal the whole day today include sufficient servings of vegetables and fruits? and Oh yes! Proteins? Yes the Pyramid and its classification look simple enough - but in day to day hectic lifestyle, we tend to forget taking each and every thing into consideration and in long run we realise that we have missed out on lots of nutrition and adequate amount of balance much needed esp for Vegetarians.
