The Food Pyramid esp for Vegetarians is little complicated. The need to maintain the essential balance is so crucial - instances like did you take the required amount of Dietery Fibre? what about whole grains? Did your meal the whole day today include sufficient servings of vegetables and fruits? and Oh yes! Proteins? Yes the Pyramid and its classification look simple enough - but in day to day hectic lifestyle, we tend to forget taking each and every thing into consideration and in long run we realise that we have missed out on lots of nutrition and adequate amount of balance much needed esp for Vegetarians.

So, in order to make sure of that aspect, I try to plan ahead all the meals during the week - right from breakfast, lunch, tea time to dinner; making sure to see that I have incorporated all the essential groups in the pyram…
Still they were rather tasty when served with some roasted tomatoes and a side salad. The spinach might end up under an egg and some cream; it won’t be wasted. The recipe for these filo pastry pies is on the Times website; what is interesting is cooking them in muffin tins.
Here are my wonderful organinc walnuts that I buy in big 3 kg bags from a farm. They are wonderful and I don’t even use them so much in baking or cooking because I tend to eat them on their own. I love the sound of them cracking, so usually I just shell them one by one and pop them in my mouth!
Another thing I love to do with my walnuts is toast them in the oven with the shells on. I’ve learned this when I lived for a while in Italy, my roommate’s mom would send her bags of this toasted walnuts, that we would eat with cheese and bread as night snacks. Those were the days!…
So next time you’re using your oven just put a tray with some whole walnuts and toast for a while. Temperature and time is really relative, but as a guidance you can do it for about 15 minuts at 180ºC (350ºF).
