Andrew from Scottish Cow is hosting this edition of Paper Chef and selected the following ingredients:

Yoghurt, Quinoa, Rice and Tomatoes

For the first-timers, the premise of is that you create a dish using these four ingredients and each month another set of four ingredients are chosen.

Immediately, when I saw Rice I starting thinking along the line of some kind of wrap. Quinoa proved to be a bit of a sticking point, you couldn’t just stuff the wrapper with quinoa, it would just dribble out. So I needed to think of something that would bind the quinoa and the solution came in the from of eggs.

I’ve had rice rolls in the past that have used omelets as part of their filling - so for this recipe, I’ve made a quinoa omelet.

It has been ages since I last took part in Paper Chef and when I spotted the list of ingredients over at Hunter Angler Gardener Cook I thought it was a perfect opportunity to get involved again.

The ingredients are fresh oregano, walnuts, chickpeas (or chickpea flour) and fish steak and for me they immediately brought up images of the Mediterranean. It would be a given that I’d use the fresh oregano to make Salmoriglio - a sauce that finds its perfect match with swordfish.
