When I was reading Sophia’s blog yesterday, I got inspired to make a pastrami sandwich on rye with coleslaw. I picked up some pastrami while grocery shopping today and I was so excited to get home and make lunch. This sandwich took no more than five minutes to make, and it was hearty and delicious. I loved the combination of the soft bread, crunchy coleslaw, and the tangy sauce with the tomato

This is one of my favorite sandwiches. It’s quick and easy to make and tastes fantastic. I always cook my panini sandwiches dry (without butter or oil) and they turn out really crispy without being greasy. The pastrami goes really well with the deli mustard, tomato slices, Swiss cheese and rye bread while the peppers give the sandwich a nice tangy flavor.Pastrami, Peppers, Swiss and Tomato on Rye
