The shredded beef from the Beef and Sweet Potato Baked Taquitos was so delicious that I couldn’t wait to eat the leftovers. I made these tasty tostadas for lunch and they simple, healthy, and tasted fantastic. I loved the tender beef with the crisp corn tortilla and the creamy refried beans topped with tasty lettuce, tomatoes, avocado, green onions, and cotija cheese. It was a light yet filling

We were heading to a friends house to celebrate his birthday. His wife wanted me to bring Taquitos to pair with the Tortilla Soup she was making. I decided to make the taquitos using ingredients and flavors from one of the birthday boy’s favorite dishes I made for him last spring, my Shredded Beef and Sweet Potato Stuffed Chiles. We had our friends come over to celebrate my dear friend Kyle’s birthday. For her birthday dinner she requested some shredded beef flautas with homemade salsa and fresh guacamole. This meal was simple to make and tasted amazing. The beef turned out tender, juicy, and so flavorful while the tortillas were perfectly crispy without being greasy. These flautas were a big hit with all of us,

I’ve been wanting to try my potato crust quiche using shredded potatoes instead of sliced potatoes. I made this quiche for dinner and used diced tomato, fresh spinach, dill, red onion, and feta cheese. The dill really made this dish pop with flavor and I loved the salty flavor the feta cheese gave the quiche. It was a healthy and flavorful dinner that my husband and I enjoyed greatly. This quiche

Our good friends were coming over for dinner and I wanted to make something simple, hearty and delicious. I decided to do shredded beef enchiladas with black beans and caramelized onions. I let the beef cook for hours in the oven - my house smelled so good. The enchiladas were great, the meat was tender, spicy and flavorful while the onions were deliciously sweet. I topped them with a dollop

So these stuffed chiles aren’t the most visually stunning food but they are SO UNBELIEVABLY DELICIOUS. Seriously, I need to use all caps for how good this dish was. We had friends over for dinner and I wanted to re-create a recipe I had at my favorite Boise restaurant called Barbacoa. I loved the dish so much the last time I was there, I asked the waiter to grab the chef. He came out to our table
