After moving to this new Copenhagen place of mine (I finally moved my very last bit out), I wanted to do something nice for myself. Something that would:
A. Make myself feel like a real home with real responsibilities,
B. Spice up my every day.
Keeping these in mind I decided to:
1. Plant my own plants - I bought mango, dates and an avocado. I ate all of them and planted the seeds. It is very easy, I have done that before. As each time I forget which way to plant them, I simply lay dates seeds horizontally about 2 cm underground and with mango, I lay it with the spiky corner downwards - both avocado and mango seeds buried half-way through the ground.
I also planted my own herbs - coriander, basil, sage, rosemary, thyme,… etc.
2. I underwent a serious inspection of my spices and threw out half of them, due to the fact that they have been around probably longer than me. And I bought fresh new ones. Wow, is there a diffe…

However trust me, those two bandits that were in MY kitchen were very friendly ones. In fact SO friendly that after meeting them once, I could not resist to let the door open for them to come back. The two bandits I am talking about are the ones of Jugalbandi - Jai & Bee…
These guys really know how to cook their vegetables. Their virtual cookbook is a tray of health & nutritions. I was tempted several times and as I cannot tell you which one is the best, I am posting them all here:
1. Minty Coleslaw With Vegan “Mayo” Dressing - a true international fusion. Thai spiced creamy Tofu blend mixed into shredded cabbage, topped with cranberries and nuts…. and mint. A very interesting combination and I was completely sold on that one.

What´s For Lunch, Honey? is usually fairly easy one around here. As we all are greatly productive in our jobs, the answer would not differ that much: Canteen food, sweetie.
In case like mine, you don’t bother thinking about lunches, if warm buffet is right down the stairs. It is in the evenings, when it gets darker outside, hungry necks arrive home and expect a banquet ready on their plates.
Recently even though the time has not allowed it, I have allocated a few hours to indulge in true pleasure. Everything I cooked has barely touched the plates and ooops was it gone in seconds. Here it is - my adaption of Meeta´s What´s For Lunch Honey, in a more relaxed evening way…

One Hot Stove is a very special blog to me, just as is Nupur - the lovely lady behind it. I still remember the very first time I stumbled upon it and read about blogging events. I was so excited about the idea of getting to know everyone else in the blogosphere and having my blog becomming a part of my daily life.
Today, I still visit One Hot Stove on a regular basis and read about Indian traditions as well as Nupur´s international kitchen experiments. I am very happy she volunteered to be cooked from in T&T´s July Edition.
