This Spanish dish was challenge #3 for me as a Daring Cook, following Chinese dumplings and Fish With Powders. And I certainly felt daring. Sourcing cuttlefish and squid for the recipe was no problem, but preparing them for cooking, including cleaning out ink sacks and innards took me places I had never been before (Stephanie Alexander had explanations).
