Roasted Bay Scallops with Spinach by Coconut & Lime

Ingredients:1 lb bay scallops1/2 cup defrosted, drained frozen chopped spinach1/3 cup dry vermouth2 tablespoons lemon juice1 clove garlic, minced1 shallot, mincedzest of 1 lemon for the breadcrumbs3/4 cup freshly made bread crumbs1 teaspoon parsley1/2 teaspoon garlic powder1/4 teaspoon freshly ground black pepper1/4 teaspoon salt Directions:Preheat oven to 325.
