Salsify, squid and sous vide… by Laura

One of those three things is going to change my life. I’m talking about salsify. These little oyster root things are kind of hard to find, but a friend of mine was excited about them, so when I saw them at Central Market yesterday, I picked them up. The texture is similar to that of an artichoke heart and apparently, the taste is as well. We prepared them with peaches, thyme, lemon juice and a touch of brown rice syrup.
