Sarciado, which means “with
sauce”, is another excellent way to re-use leftover fried
fish. Like the bangus with tausi recipe in The CookMobile archive, chopped onions, garlic, ginger and tomatoes are sauteed in oil, a small amount of water or broth is added, and
fish pieces are then simmered in the resulting juice to absorb flavor. Whether using leftover or not,
fish is fried beforehand to prevent from falling apart while cooking in the
sauce.
