A week after coming back from Hawaii I went to a
cheese making course undertaken by my local community college.
Since I like to make as much as possible from scratched it seemed a sensible idea to see what was involved in making
cheese and if it was worthwhile doing as a home cheesemaker.
We were taught 3 cheeses to make - fetta, mascarpone and ricotta.
I have made all 3 since the course and today I will share how to make ricotta.
